Foodie: Skinny Chicken Korma - SortedFood recipe.

A while ago I stumbled across the Feel Good Food show on the Bodytalk Daily youtube channel. The first episode I saw was when they made skinny chicken korma and after that I was hooked!


Since then, I've already watched so many of their videos on the Sorted Food website, their desserts all look so good! Unfortunately I'm trying to eat a lot more healthy than in the past months, so I'm going to have to wait to give some of the sweet treats a try.
 
Last night I made the skinny chicken korma for me and my father. We both loved it! I made some pictures while making it to share with you all. At one point I got too stressed (which was my own mistake) to take pictures so it's not as complete as I wanted it to be but I think it still gives a nice idea.
 
Here's the Sorted Food recipe with some of the pictures I took.
 

Ingredients

1 onion, peeled
2 cloves of garlic
a thumb sized piece of ginger
a glug of oil
2 tsp of garam masala
2 tsp of mild curry powder
1 cinnamon stick
3 cardamom pods
skimmed milk (200ml)
a chicken stock cube
4 chicken breasts (500g)
low fat natural yoghurt (100g)
1 tbsp of ground almonds
a small handful of toasted flaked almonds
a handful of torn coriander

Recipe

dice the onion then peel and chop the garlic and ginger (peel the ginger with a spoon, easy peasy!).
blitz all of the above in a food processor until you have a smooth paste.

heat the oil in a saucepan and chuck in the onion, garlic and ginger.
cover with a lid and gently sweat for 5 minutes.
 
spoon in the garam masala, curry powder, cinnamon stick and cardamom pods.
 
 
cook the spices until they're fragrant then pour in the milk and crumble in the stock cube.
 
fill a pan with water and cook rice of your choice. 
 
simmer gently for 20 minutes, until the sauce is beginning to thicken.
dice the chicken into bite sized cubes.
scoop out the cinnamon stick and cardamom pods.
add the chicken to the sauce and simmer gently for 5 minutes to poach the chicken.
 
remove from the heat and stir in the yoghurt and ground almonds.
 
serve with boiled rice and scatter over the flaked almonds and torn coriander.
this recipe serves 4 people

If you're a fan of Indian food, or if you like strong flavours but don't like very spicy food, give this a go! It's not difficult at all and like I've said before, it tastes amazing.

I love korma but I don't eat it a lot because I always think it's so unhealthy!!

Yeah with take aways there's this layer of fat covering it! This doesn't have that at all. If you're going to make it, let me know how it went, I'd love to hear that! Thanks for your comment. xx
